Macro Mushroom Identification Guide
A field walk-through for Agaricus urinascens, the very large grassland Agaricus with grey-pink young gills, a thick felty ring, an ammoniacal odour in age and exceptionally big spores.
The Setting You Will Be Standing In
The Macro Mushroom is a grassland species, and the setting is usually old, undisturbed turf: unimproved pasture, chalk downland, hay meadow, grazed dune grassland, wide roadside verges and the rough grass of parkland. You find it from a distance. In autumn, after rain, large white domes are visible across a field from tens of metres, sometimes strung out along an arc or in a broad ring where the mycelium has been expanding outwards for years.
The first thing you notice at close quarters is weight. A mature fruitbody is genuinely heavy in the hand, with thick, firm flesh and a stipe like a wooden dowel. Agaricus urinascens is one of the largest mushrooms of open grassland, and that bulk is part of the identification.
Step One: The Cap
Caps run 10-25 cm across and can exceed 30. Young ones are hemispherical or almost spherical, with the margin rolled tightly under and often carrying hanging fragments of the veil. They expand slowly to broadly convex and eventually to nearly flat, keeping a thick, blunt margin that usually projects a little beyond the gills.
The surface is dry, white to cream when fresh, ageing to ochre-buff or dull tan, especially where handled or sun-bleached. It begins smooth and faintly silky and soon breaks up: fine appressed scales develop, and in dry weather the disc cracks into a mosaic of small plates. There is no slime layer, no zoning and no fibrous shagginess.
Rub the cap surface lightly with a fingertip and watch for thirty seconds. You may see a slow, faint ochre or dull yellowish discolouration, but there should be no rapid, bright chrome-yellow flush. That negative reading matters later.
Step Two: The Gills
The gills are free, ending short of the stipe and leaving a distinct narrow collar or gutter around the top of the stem. They are crowded and narrow in proportion to the vast cap, with numerous short lamellulae.
The colour sequence is the most useful gill character in the genus, and here it is distinctive. In very young buttons the gills are whitish to pale grey or greyish-flesh, notably dull rather than bright, which separates this species at once from the vivid pink-gilled grassland Agaricus species. They then move through greyish-pink and dull pink to a rich purple-brown, and finally to a dark blackish-brown at maturity. Always cut a young button in half lengthways to see the youngest gill colour properly.
Step Three: The Stipe, Ring and Base
The stipe is stout and comparatively short: 6-15 cm tall and 2-5 cm thick, sometimes thicker, and it usually tapers downwards to a narrower, rounded base. It is solid, white, smooth above the ring and often finely scurfy or floccose below it.
The ring is thick, soft and felty, hanging pendulously from the upper third of the stem, sometimes double with a patchy or scaly lower layer, and it often tears into fragments that stay stuck around the stipe or on the cap margin. There is no volva, no sac and no rimmed basal bulb; the base is simply a rounded, solid, tapering end.
Dig the base out and cut it in half vertically. In Agaricus urinascens the cut base stays white or slowly turns a dull pinkish or ochre shade. It does not flush an instant bright chrome-yellow.
Step Four: Flesh, Colour Change and Odour
The flesh is exceptionally thick, white and firm, more like a dense sponge than the thin flesh of most field species. On cutting it may discolour slowly to pale pinkish or vinaceous-brown, especially near the gills and in the stipe cortex, but it never goes red instantly or turns bright yellow anywhere.
Odour changes with age and is the reason for the epithet. Young, fresh fruitbodies smell pleasant and faintly anise-scented. As they mature, and especially if they are left in a closed bag or box, they develop a strong ammoniacal, nitrogenous smell. Take the reading twice: once at the point of finding, and again after an hour in a container.
Taking and Reading a Spore Print
A cap this big makes printing easy. Cut a mature cap free of the stipe and lay it gill-side down on white paper. Because the print is very dark, white paper gives the best contrast. Cover the cap with a bowl to keep humidity in and to keep draughts out, and leave it for two or three hours; a big cap will often produce a dense deposit in half that time.
The print is dark chocolate-brown with a purple cast, one of the darkest prints of any grassland mushroom, and it is a clean genus-level confirmation. Under a microscope the confirmation goes further: the spores are unusually large for the genus, roughly 8.5-13 by 5.5-8 microns, smooth, thick-walled, brown, and ellipsoid with a small apical pore. That size is the origin of the older name macrosporus and is the character that clinches the species where several large white grassland Agaricus species overlap.
Substrate, Season and Ecology
This is a saprotroph, not a mycorrhizal species. Its mycelium decomposes organic matter in the soil and turf thatch of long-established grassland, so it is a fungus of old, undisturbed, nutrient-rich swards rather than recently ploughed or reseeded ground. It shows a marked preference for calcareous soils, chalk and limestone downland, and grazed dune grassland, and it is also found in parkland and on verges where turf has been undisturbed for decades.
Fruiting runs from midsummer to late autumn, typically July to November, following heavy rain after warm weather. Because the mycelium expands outwards through the soil year on year, the fruitbodies often mark out arcs and rings that broaden slightly each season, and a known ring is worth checking annually.
Separating the Closest Look-alikes on Morphology
Agaricus arvensis, the Horse Mushroom, is the closest match in habitat and general appearance. It is usually smaller and less massive, its cap and stipe stain a clear yellow when rubbed, its ring commonly shows a cogwheel or star-like pattern of patches on the underside, and its spores are considerably smaller.
Agaricus campestris is much smaller and thinner-fleshed, with gills that are bright clear pink from an early stage, a thin, simple, fragile ring that often disappears, and no ammoniacal odour.
Agaricus xanthodermus and its relatives are separated by cutting the base of the stipe: the flesh there flushes an immediate, vivid chrome-yellow, and the fruitbody carries a phenolic, ink-like odour. The cap is often greyer with a squared-off shoulder.
Agaricus bitorquis is a tough, thick-fleshed species of compacted urban ground with a distinctive double, sheathing ring low on the stem and pinkish young gills.
Agaricus augustus is browner and covered in concentric fibrous scales, and it yellows readily on handling.
Macrolepiota procera is superficially similar in size but has gills that stay white and never turn pink or brown, a white spore print, a snakeskin-patterned stipe, a thick movable double ring and a scaly umbonate cap.
Leucoagaricus leucothites is smaller and smooth white, with gills that stay white or become only faintly pinkish, and a white spore print.
White-capped Amanita species have free gills that remain white at every age, a thin membranous ring, a swollen base sitting in a sac or a rimmed bulb, and a white spore print. Taking a print separates them from any Agaricus in a single step.
