Peppery Milkcap Identification Guide

Working through Lactarius piperatus in the field: a matt white funnel-shaped cap, extraordinarily crowded forking decurrent gills, and copious unchanging white latex.

First Impression and Setting

A large white mushroom standing in beech or oak woodland on heavy soil in high summer is the usual introduction. The Peppery Milkcap, now often placed in the genus Lactifluus, is a solid, chalky, matt-white fungus, 6-16 cm across, frequently pushing leaf litter aside as it expands and often growing in small groups or loose rings on shaded ground.

Three impressions arrive together: the whiteness is dull and unpolished rather than silky or shiny, the cap becomes broadly funnel-shaped, and the underside looks unusually fine and striped because of the density of the gills. That gill density, visible from a metre away, is the first real clue.

Reading the Cap

The cap is 6-16 cm across, occasionally larger, convex with a strongly inrolled margin when young, then flattening with a central depression and finally becoming distinctly funnel-shaped or infundibuliform.

The surface is dry, matt and slightly uneven, described well as unpolished. It is never viscid and never velvety-woolly. White at first, it commonly develops cream, buff or pale ochre-tan stains with age or handling, particularly at the centre and on any bruised area, and old caps often crack finely towards the disc. The margin loses its inrolled habit and may become wavy in maturity, but it stays smooth and bald; there is no fringe of hairs, no rolled cottony edge and no zoning.

Reading the Gills

Turn it over, and this is where the identification is largely made. The gills are extraordinarily crowded, so tightly packed that individual blades are hard to count with the naked eye, and they are narrow, thin, and shallowly to distinctly decurrent, running some way down the stem.

Many of the gills fork, especially near the stem, and the intervening spaces are filled by numerous shorter gills of several lengths. Colour is white to cream at first, ageing to pale cream or ochre-buff, and damaged areas discolour ochre or dull yellowish-brown. Nothing is pink, nothing is orange, and no zoned pattern develops.

The Latex Test

All milkcaps bleed, and how the bleed behaves is the core of the genus. Slice across the gills of a fresh, well-hydrated fruitbody with a clean blade and watch.

Lactarius piperatus produces copious white latex, released quickly and in quantity, and the key observation is that it stays white. Watch the droplets themselves for five to ten minutes, and also smear latex onto a white handkerchief or a piece of white paper and check it again after twenty or thirty minutes as it dries. In this species the latex remains white or dries pale cream, and the exposed flesh may slowly stain a faint ochre. It should not turn yellow, and it should not dry to a distinct grey-green stain.

Carry out the test on fresh material collected on a damp day. In a drought the latex may be sparse and slow, which makes the crucial colour change hard to read.

Stipe, Base and Flesh

The stipe is short and stout relative to the cap, 3-8 cm long and 1.5-3 cm thick, solid, firm, white, dry and matt, usually tapering somewhat towards the base and sometimes slightly off-centre. There is no ring, no net, no velvety coating and no volva; the base is simply narrowed and often stained ochre with soil and age.

Cut the whole fruitbody in half from cap to base. The flesh is thick, firm, white and brittle, breaking with the clean granular snap typical of Russulaceae rather than the fibrous tearing of most other gilled fungi. That brittleness, together with latex, is what places the collection in the family before you ever reach species level. On exposure the cut flesh stays white or turns very slowly to a pale ochre-cream. The odour is faint, mild and largely indistinct.

Spore Print and Microscopy

Remove the stipe and lay the cap gill-side down on dark paper, since the print is pale. Cover it and leave it four to six hours. The print is white to very pale cream.

Under a microscope the spores are broadly ellipsoid, roughly 6-8.5 x 5-6.5 microns, and ornamented with low warts and fine connecting lines that form an incomplete network. The ornamentation stains blue-black in Melzer's iodine reagent, an amyloid reaction shared across Russula and Lactarius and useful for confirming the family.

Substrate, Season and Ecology

This is an ectomycorrhizal species, forming root sheaths with broadleaf trees, above all beech and oak, and occasionally with hornbeam and other hardwoods. It prefers heavier clay and loam soils, in shaded, mature, closed-canopy woodland.

The season runs from midsummer into autumn, with the main flush often earlier than that of many woodland fungi, appearing after summer thunderstorms. Fruitbodies emerge singly, in scattered groups, or in arcs following the extent of the mycorrhizal mat, and they are robust enough to persist for a week or more, becoming discoloured and slug-grazed with age.

Separating the Look-Alikes on Morphology

Lactarius vellereus, the Fleecy Milkcap, is the most frequent confusion. It is stouter and larger, its cap surface is distinctly velvety or finely woolly to the touch rather than matt-smooth, its margin is more strongly and persistently inrolled, and, decisively, its gills are far more widely spaced and thicker. Its latex is scanty.

Lactarius glaucescens is almost identical in stature and gill spacing, and the separation rests entirely on the latex: it dries to a distinct grey-green or bluish-green stain on the gills and on a handkerchief, whereas the Peppery Milkcap's latex dries white to cream.

Lactarius controversus is a white milkcap of poplar and willow, usually with pinkish or vinaceous blotches on the cap and, definitively, pale pink gills.

Lactarius pergamenus in the broad sense is closely allied and differs in a more wrinkled, cream-tinted cap and a longer stem.

Russula delica looks superficially the same: white, funnel-shaped, brittle. It has no latex whatsoever, which settles the matter instantly, and its gills are widely spaced and thick, often with a bluish-green tint where they meet the stem apex.

Leucopaxillus and white Clitocybe species have soft, fibrous, non-brittle flesh, no latex, and gills that are neither forking nor so densely packed.

How can I be sure it is a milkcap rather than a white Russula?
Two checks. Latex is present in Lactarius and absent in Russula, so a clean cut across fresh gills settles it. Then look at gill spacing: Russula delica has thick, distant gills often tinted blue-green at the stem apex, while this species has extremely crowded, narrow, forking gills.
