Woolly Milkcap Identification Guide

Field routine for Lactarius torminosus: the shaggy bearded margin, faint concentric zoning, brittle Russulaceae flesh and unchanging white latex, plus its strict birch partnership and its paler downy cousin.

First Impression and Setting

A damp birch wood on acid ground — heath edge, mossy hollow, a scrubby birch stand on sandy soil — and among the moss and fallen leaves sits a pale pink cap with an edge that looks unshaven. Woolly Milkcap is a solid, medium to large mushroom, squat rather than tall, and its most memorable feature is visible from standing height: the margin is strongly rolled under and clothed in long, shaggy, matted hairs that form a distinct beard around the rim. Faint concentric zones of deeper pink circle the cap like the rings of a target. It fruits from midsummer through autumn and is almost always within a few metres of a birch.

Reading the Cap

The cap is 4 to 12 cm across, convex with a strongly inrolled margin at first, then flattening, becoming centrally depressed and finally shallowly funnel-shaped while the margin stays turned under longer than in most species. The ground colour is a pale flesh-pink, salmon or apricot-pink, usually stronger in the centre and paler toward the edge, and it is broken by concentric zones of slightly darker pink that may be obvious or barely traceable depending on age and weather. The surface is slightly sticky when wet and dries matt. The hairiness increases outward: the centre may be nearly bald, the middle finely woolly, and the outer third densely shaggy with long, tangled, whitish to pink-tinged hairs that mat together when wet. Run a fingertip outward from the centre and you can feel that gradient.

Reading the Gills

The gills are crowded and narrow, adnate to slightly decurrent so that they just begin to run down onto the stipe, and they fork repeatedly near the attachment. Colour is pale cream to pinkish-buff, often with a faint flesh tone, and old gills discolour to ochre or dull yellowish-brown, especially where dried latex has stained them. The gill faces are smooth and the edges even. Because this is a member of the Russulaceae the gills are brittle: press one sideways with a fingernail and it fractures rather than bending, a texture quite unlike the pliable gills of most agarics.

Latex: How to Test It

The latex is the character that puts a mushroom in Lactarius at all, and reading it properly requires a fresh, young, well-hydrated specimen. Score the gills across with a knife tip or snap the cap in half, then wait ten to twenty seconds. Woolly Milkcap releases latex copiously. It is pure white and it stays white — watch a bead on the blade for several minutes and it does not turn yellow, lilac, greenish or orange. To be certain, smear a drop onto a white handkerchief or a piece of tissue and check the mark after five minutes; a colour shift on cloth is often visible when it is not obvious on the mushroom. Where latex dries on the gills it eventually leaves a dull ochre-brown stain, but that is a drying artefact rather than a true colour change.

Stipe, Base and Flesh

The stipe is short and stout, 3 to 8 cm long and 1 to 2 cm thick, cylindrical or narrowing slightly downward, and coloured a paler pink-cream than the cap, often nearly whitish. Its surface is smooth and dry, sometimes very finely downy at the extreme base, and it lacks the deep pits, or scrobicules, found on the stipes of some related species. It is stuffed when young and becomes hollow with age. There is no ring and no volva.

Cut the fruit body vertically. The flesh is white to very pale pink, thick in the centre and thin toward the margin, and it is chalky-brittle: it snaps like a piece of blackboard chalk instead of tearing into fibres, because Russulaceae flesh is built from clusters of rounded cells rather than long threads. Beyond the ochre staining of dried latex, the cut surface shows no colour change. The odour is faint and slightly fruity or geranium-like in some collections.

Taking and Reading the Spore Print

Use a fully expanded cap and cut the stipe flush. Because the cap is often funnel-shaped, set it on a flat sheet and prop it so the gills sit horizontally; a slight tilt gives a lopsided print. Lay it on dark card with white paper alongside, cover it, and leave four to eight hours. The print is cream to pale buff — clearly not pure white, but far from brown. Piling the deposit with a blade helps you judge that cream tint. Microscopically the spores are broadly ellipsoid and ornamented with a network of ridges and warts that turns blue-black in iodine, an amyloid reaction shared across the genus and easily seen with a drop of Melzer's reagent.

Substrate and Season

This species is ectomycorrhizal and its partnership is narrow: it associates with birch, and in practice you should not accept an identification made away from birch. The fungal sheath wraps the fine root tips of the tree, trading mineral nutrients and water for sugars. It favours acidic, often damp, sandy or peaty soils — heathland birch scrub, mossy birch woodland, damp woodland margins, and the birch fringes of bogs. The season runs from July to October or November in temperate regions, peaking after sustained late-summer rain. Fruit bodies often appear in loose scattered groups following the root spread of a single tree.

Separating the Look-alikes on Morphology Alone

Lactarius pubescens is the close relative and the main test of your eye. It is generally smaller, much paler — whitish to cream with only a faint pink flush, often strongest at the centre — and it is weakly zoned or not zoned at all. Its margin is downy or shortly woolly rather than long-bearded, and it favours younger, more disturbed, sandy birch ground.

Lactarius torminosulus is an arctic-alpine counterpart of dwarf birch, smaller, with a less strongly developed beard and duller colours.

Lactarius spinosulus is much smaller, lilac-pink to violet-pink, and its cap carries fine pointed scales rather than a shaggy woolly margin; it also grows with birch.

Lactarius controversus is far larger and heavier, whitish with pink to wine-coloured blotches, has a smooth or only slightly downy cap without a beard, distinctly pink gills, and grows with poplar and willow.

Lactarius scrobiculatus is yellow rather than pink, with a stipe pitted by conspicuous scrobicules, and its white latex turns yellow within a minute; it associates with conifers.

Russula species share the brittle chalky flesh and often the pink colouring, but they release no latex at all. Score the gills and wait — no drop, no Lactarius.

What does the partnership with birch involve?
The fungus sheathes the tree's fine root tips and extends threads far out into the soil, taking up water, phosphorus and nitrogen that the roots alone could not reach and passing them to the tree. In exchange the birch supplies sugars made by photosynthesis. This exchange is why the fungus cannot be found growing away from its host.
